The equipment needed for stir-frying, sauteing and braising is minimal. Nonstick skillets and heavy-duty woks are especially helpful in keeping fat use to a minimum. Nylon or wooden utensils allow you to stir food vigorously without scratching the pans. Lids prevent spattering and allow foods like chicken pieces to braise or simmer briefly for thorough cooking.
